Garlic Marinated Halibut
Served in this picture with Brussel Sprouts with a Kick.
**This recipe calls for 2 hr marinating period in the fridge however it can also be made on the spot and still be delicious if you forget to set it up early.
Ingredients:
- 4 T olive oil
- 4 T of minced garlic
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 2 T lemon juice
- 4 6 ounce halibut fillets, skin removed
- Dried or fresh chopped parsley.
Directions:
- In a large sealable plastic bag, combine olive oil, garlic, oregano, salt, pepper, and lemon juice. Mix well.
- Add fish, seal bag and turn gently to coat both sides of fish. Refrigerate 30 minutes or up to 2 hours.
- Preheat oven to 400 degrees. Cover cookie sheet with tinfoil.
- In a large skillet, pour 1 T olive oil into pan and spread evenly.
- Warm over high heat until smoking, then add fish fillets.
- Brush fish with any remaining marinade.
- Cook briefly 1-2 minutes per side, until each side is opaque.
- Place fillets on tinfoil covered cookie sheet, add any remaining marinade and sprinkle with parsley.
- Place pan in the oven for 10 minutes.
- Serve and enjoy with your favorite side vegetables and unlimited raw salad.
